Buras, The Traditional Food that Still Exist.
Buras is one of traditional foods of South Celebes
and it usually served and eaten on special day such as Eid celebrations. But, in
some “Warung Makan” they provide it in their menu. So, let’s say that Buras is
traditional food that still exist in the society.
Buras have some similarities with Lontong. But of course
the way to make Buras is little bit different.
The ingredients that we need to provide before make
Buras are 500 grams rice that already washed cleanly. 1 liter coconut milk. 2
sheets of bay leaves that dried. 3 sheets of good quality banana leaves. 2
teaspoons of salt that used as flavoring. And last but not least is rope that
taken from bag of rice or also called ‘Karung Beras’ in Bahasa.
After all the ingredients is well prepared, time to
make it. First, coconut milk, bay leaves, and salt are boiled and mixed until
boiling. Enter the rice that already washed cleanly to the coconut milk decoction
and mix it once in a while until the coconut milk decoction and rice well mix
and medium cooked.
Then, take a sheet of banana leaf and put it on the
table. Put the coconut milk decoction and rice adequately that already cooked
on the banana leaf then fold it. Do the same way with the other banana leaves. After
that, use the rope to tie all the coconut milk decoction and rice that already
put on the banana leaves become a bunch. Well, in this step, we can call it as
Buras, but it has not ready to served.
The next step is heat some water until boiling. Enter
Buras and boiled it for 3 until 4 hours. After well cooked, remove it from the
boiling water. Wait several minutes until it cold and it finally ready to be served.
I personally love to eat Buras with Nasu Palekko, a
traditional food of Sidrap Regency. But sometimes I eat it with meatball.
